In the alarm.com app should I see my smoke detectors like I see the door sensors?
No. The only sensors you will see in the app are those that are eligible for Activity Monitoring.
Life safety devices, like the smoke detector, are not eligible as they are either triggering an alarm event or not.
You can see if they trigger an event in the history, however.
