Since we currently have alarm.com products (cameras, sensors. panel) with another provider, would we still be able to mix those products with a panel and camera from surety, if we switched to them as our security provider?

Yes as long as you order the correct sensor model. Different sensors have different frequencies they work on. What is the model of your panel so I can better assist?
Another thing to note if you are doing this yourself. Sometimes dealers change the installer/dealer code on the panel so users wont be able to access programming and make changes. I would confirm you are able to access panel programming

I have an IQ Panel 2 with supporting window, glass break, and motion sensors. I am looking to upgrade to an IQ Panel 5 and add a doorbell AI camera (or POE doorbell camera) and an outdoor AI POE spotlight camera.
I am hiring someone else (not a dealer) to do the install.
If I have the newer panel installed, will the older sensors still work?

This mostly depends on your current sensors and panel model. The IQ Panel 5 can handle PowerG devices but you may need a legacy card(319, 433, 345) if you are using either DSC, GE, or Honeywell/Ademco sensors.
Can you swipe down from the main screen > Settings > Advanced Settings > Installer/Dealer Code > System Test > Daughter Card Test > There should be one labeled SRF - xxx what are the numbers in that section?
If you cannot access that section, the model number should be located on the back of the panel.
Pictures of the sensors could also help determine your sensors frequency.
