If someone enters the house, grabs the main panel, and within the 30-second pending alarm phase destroys the panel, what happens next?

That’s when Alarm.com crash and smash protection would kick in.
Pending alarm is referencing Dialer Delay. Dialer Delay cannot be selectively applied to one arming mode and not the other, it affects all burglary alarms.
If the panel is disabled during an entry delay or dialer delay countdown Alarm.com determines the event is a likely crash and smash attack. ADC already has that pending alarm event and epects either a disarm or a confirmed alarm signal. If neither occur, it is treated as an alarm.
