I noticed that Alarm.com has added the ability for you to add a device via the ADC UI. Can you explain the difference between adding a z-wave device via ADC and my 2GIG GC3 panel?

The feature through Alarm.com is essentially the same thing as doing it through the panel. ADC sends a remote command to put your panel into Z-Wave enrollment mode, just like what you would do locally.
You still want to follow the same guidelines when installing a z-wave device via app and you may need to clear the device first before adding.
Adding devices through the app is more of a convenience than anything.
