Can you tell me if the USB cable that is used to update firmware is just a standard USB cable? Did they do something to the pin outs or is the panel end of the cable something non-standard?

It is a USB standard on one end and J4 on the other. The cable and 4 pin for TS1 is $24. If you try to jerry rig your own cable you may end up with a bricked panel.
One half of the cable is a standard USB cable, but the other half is specifically designed for the 2GIG panel.
It is different than a standard USB cable.
