I,m only getting a tamper alert on a door contact when the alarm is disarmed. Is there any way to have tamper alerts enabled when the system is armed/away/stay?

What model of alarm panel are you using?
What model of door sensor is it?
In general, if a sensor is programmed as a monitored zone type, if it is tampered (cover removed) when the system is disarmed it will throw a tamper. If it is tampered when the system is armed that will result in an alarm signal.
If you are just opening/closing the door and getting a tamper that means something about the installation is incorrect. If a 2GIG Panel you likely have the wrong loop in programming.
